Dalcha Masala is a traditional Hyderabadi blend for the iconic lentil-and-meat curry. Tangy, mildly spiced, and hearty, it produces a comforting dish that pairs perfectly with biryani or rice.
Ingredients:
• 1 cup chana dal (soaked)
• 500g mutton
• 2 onions (sliced)
• 2 tomatoes (chopped)
• 2 tbsp Dalcha Masala
• 1 tbsp tamarind pulp
• 1 tbsp ginger-garlic paste
• 3 tbsp oil
• Curry leaves & coriander
• Salt to taste
Recipe Steps:
• Pressure cook mutton with ginger-garlic, masala, and salt until tender.
• Separately cook soaked chana dal until soft.
• Heat oil; fry onions golden.
• Add tomatoes and remaining masala; cook till soft.
• Combine mutton, dal, and tamarind pulp; simmer 15 minutes.
• Garnish with curry leaves and coriander; serve with rice.
